Brewing high-quality beer, without excessive alcohol content, is what it’s all about. The name Sonnen Hill comes from Sonne, which translates to sun and our family name Hill.

Brewing has been in our family for generations. In 1822, our great great great great grandfather Fidel Burgmaier started Sonnen Brauerei in Schmiechen, a small town in southern Germany. They brewed lager beer in open fermenters and conditioned beer in large horizontal lagering tanks, serving their local community for over 160 years. Today, we continue the tradition by making simple and easy-drinking beers that can be enjoyed by all.
Sonnen Hill was founded in 2017 and we started brewing beer in 2018. For our first two years we were a very small operation and only distributed products to bars and restaurants across Ontario. In 2020, we opened our bottle shop in the height of the pandemic and now sometimes send beer to other provinces across Canada and countries in Europe and Asia. We are family-owned and -operated and are a small team of passionate individuals who work very hard to produce the quality products that we do.
We aim to make easy-drinking beer and like to focus on the following styles: clean hoppy beer, a variety of lagers, saison, fruit beers, and spontaneous beer. We use the finest ingredients we can find for our hoppy beers and lagers as we aim to make classic beer influenced by modern brewing techniques. All of our saisons, fruit beers and spontaneous beers use almost exclusively Ontario-grown ingredients and focus on natural fermentation using cultures from our environment. The quality of our beer is extremely important to us. We are constantly innovating and trying to improve our process to make the best beer possible. We’ve invested in high quality equipment to ensure this and reduce waste.
The brewery is located on a 37-acre farm in Caledon, ON. We have a couple hundred fruit trees that will be used to make beer in the coming years, a vegetable garden, and a bunch of beehives that are maintained by a beekeeper. We’re committed to restoring the land we use by working with our local conservation authority to reintroduce native grasses, wildflowers, and add boxes to create a nice habitat for the wildlife around us.
