Process

Lager Beer (Batch 45)

Water:
We use a blend of raw well water and reverse osmosis and adjust alkalinity to reach 0ppm as CaCO3

Grain:
88% Weyermann Barke Pils
6% Weyermann Spelt Malt
6% OiO Flaked Corn

Hops:
20 IBUs of clean bittering at the start of the boil
Saphir in the whirlpool for aroma

Yeast:
Lager yeast

PRODUCTION PROCESS:
- Step mash with a single decoction
- 90 minute boil
- Ferment at 8°C and raise at the end of primary fermentation for diacetyl rest
- Spund to naturally carbonate
- Lagered for 4 weeks after primary fermentation
- Centrifuged
